21 Day Fix Deviled Eggs

Deviled eggs - they're packed with protein and 21 Day Fix approved! Here's a recipe for an individual serving, but could easily be multiplied to serve a crowd! I knew that it was best enjoyed in moderation, but when I began 21 Day Fix in 2015, that was the first item to go. Not approved!?! I learned to drown my sorrows in the alternative – Greek Yogurt. Greek yogurt definitely has a place in regards to making a healthier/low cal substitute (yay for counting as a red!), but it definitely has a different taste than mayonnaise. When mayonnaise joined the approved 21 Day Fix list in June, my first thought was returning to my love – deviled eggs! These 21 Day Fix Deviled Eggs are a great snack to eat during the day. Plus, you can make them ahead and grab them when you’re ready to go.

The Mayo

With the new 21 Day Fix Food List, mayonnaise now counts as a teaspoon. Before you run to the store, make sure you check your labels and get the real thing! The best mayonnaise will have fewer ingredients, such as Hellman’s Real Mayonnaise (Amazon), but your best bet would be to make your mayonnaise at home (here’s an easy vegan mayo recipe from Quite Good Food!)

The Eggs

Did you know there’s umpteen million ways (and websites!) on how to boil an egg? I should know, because I used to Google it every single time I needed to do so! I’ll save you the trip, and here are MY tips:

  1. Place eggs in pot with cold water. The water should cover the eggs by an inch. Sprinkle some baking soda into the water (this will help with peeling).
  2. Place pot (uncovered) on stove, and turn heat on high. Wait.
  3. As soon as the water starts a full rolling boil, turn off the burner, place cover on pot, and set timer for 10-12 minutes.
  4. Remove eggs from hot water and replace with cold water with ice cubes. (My method: place pot in sink, run cold water into pot while draining the hot water, and throw in a bunch of ice cubes. This takes a couple of minutes because the eggs are hot and will continue to heat the water). Alternatively, you can dirty another dish by removing the individual eggs and placing them into a bowl with ice water.
  5. Let the eggs cool down and you’re ready to rock an roll!

The Deviled Eggs

This is one of those recipes where you can easily make a little or a lot. For one serving, 2 full eggs will equal 1 Red, 1 tsp.  In the recipe I’ll give the quantities for a single serving (in addition to a full dozen = 6 servings), so you can make as you choose.

This version is a cajun version (not spicy!). I found this cajun seasoning on Amazon. It’s not too spicy, so if you’d like to kick it up a notch, throw in some cayenne pepper to taste!

Ingredients

  • 2 Hard-boiled Eggs, peeled
  • 1 tsp Mayonnaise
  • 1 tsp Mustard
  • 1/2 tsp Worcestershire sauce
  • 1/4 tsp cajun seasoning (or paprika)
  • 1/8 tsp cayenne pepper (optional)

Instructions

  1. Cut eggs in half (lengthwise). Remove and place the yolks in a bowl.
  2. Use a fork to mash the yolks.
  3. Add remainder ingredients to yolks, and mix together well.
  4. Scoop yolk mixture back into eggs, and garnish with paprika.

Clean Crockpot Beef Stroganoff

When I first got married, my stepdaughter’s favorite meal was Beef Stroganoff – the Hamburger Helper edition! Packed with sodium and preservatives, the meal provided a creamy comfort dish! If you enjoy this meal, but would rather have a healthier, cleaner version, I’ve gone one step further and taken it to the crockpot! This Clean Crockpot Beef Stroganoff brings the ease of cooking and combines with a comforting meal that is 21 Day Fix approved! Yahoo! And the best part? My three year old daughter (who eats a diet of dairy, ketchup, and occasion chicken) LOVES this meal.

 Tina’s Pro-Tip

The mushrooms are pretty optional. I know it’s standard for this dish, but I’ve got a family of picky eaters! This meal will still taste AMAZING.

21 Day Fix Count

Measure out 1 red of the meat mixture and count as red. Measure and serve noodles as a yellow.

Clean Crock pot Beef Stroganoff

Ingredients

  • 1.5 lbs top round steak
  • 1 medium diced onion
  • 3 Tablespoons chopped parsley
  • 3/4 teaspoon dried dill
  • 3/4 teaspoon ground black pepper
  • 8 oz sliced mushrooms (optional - we skipped this due to picky eaters!)
  • 2 Tablespoons minced garlic
  • 1/3 cup whole wheat flour
  • 1 cup low sodium beef broth
  • 1 cup plain greek yogurt

Instructions

  1. In crock pot, place all the ingredients except for the flour, broth, and yogurt. Mix ingredients.
  2. In a separate bowl, combine flour and broth and whisk until flour is completely dissolved. Pour into crockpot and cook on low for 7-8 hours.
  3. Turn off crock pot and let cool for 10 minutes. Mix in greek yogurt (the steak should be tender and shred as you mix).
  4. Serve over whole wheat noodles.

Notes

Chocolate Peanut Butter Black Bean Brownies

Here’s a clean version of chocolate peanut butter black bean brownies that are gluten free and delicious! It’s an excellent source of protein and fiber, and combines the love of chocolate and peanut butter. 21 Day Fixers – see notes below on how to include it with the plan.

Tina’s Pro-Tip

Instant coffee is optional, but highly recommended. It will bring out some of the cocoa flavor and add to the richness. However, if the ground coffee beans is all you have, you may want to skip it as it’s not the same thing!!

21 Day Fix

Cut the pan into 9 pieces, and count as a yellow treat. You could freeze the leftovers (pre-portioned into baggies) and warm them in the microwave when you’re ready to eat them.

Ingredients

  • 1 (15.9 oz) can black beans, drained and rinsed
  • 3 eggs
  • 1/3 cup unsweetened apple sauce
  • 1/2 cup unsweetened cocoa powder
  • 1/4 tsp sea salt
  • 2 tsp vanilla extract
  • 1/3 cup pure maple syrup
  • 1 1/2 tsp instant coffee
  • 1 tsp baking powder
  • Topping:
  • 1/3 cup natural peanut butter
  • 1 Tablespoon maple syrup

Instructions

  1. Preheat oven to 350.
  2. Put all ingredients (except for peanut butter topping) into a food processor/blender. Blend until smooth (it should resemble cake batter at this point).
  3. Pour batter into a 9″ greased (cooking spray)square cake pan.
  4. Peanut butter topping – in a microwave-safe bowl, mix peanut butter and 1 Tablespoon maple syrup. Warm in microwave for about 30 seconds. Pour topping onto batter in scoops. Use a fork to swirl the peanut butter into the batter.
  5. Bake in oven for 30-32 minutes. Let cool before slicing, and enjoy.

Cauliflower Pizza Crust

 

My husband and kids do not do vegetables. We love pizza, and I wanted to give this a try. So when I made this Cauliflower Pizza Crust, I was surprised that everyone ate it! (Of course, I didn’t tell the kids there were vegetables in it!)

Tina’s Pro-Tip

If you full read one piece of the directions, this is going to be your most important piece of information: drying the cauliflower. If you don’t get all of the moisture out of the cauliflower after you cook/steam (before making the crust), you might end up with a mushy mess. After I drain the cauliflower, I use paper towels to help press and blot out excess moisture.

21 Day Fix: 1/4 of crust (topped with pasta sauce and cheese) 1 Green, 1/2 Purple, 1 Blue

Ingredients

  • 1 small head of cauliflower
  • 1/4 cup mozzarella cheese
  • 1/4 cup parmesan cheese
  • 1/4 teaspoon garlic salt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 egg

Instructions

  1. Preheat oven to 450 degrees
  2. Wash cauliflower, and cut off the florets. Place cauliflower pieces into a food processor. Blend into the cauliflower has a snow-like consistency.
  3. Place the cauliflower into a microwave safe bowl, cover, and cook for four minutes.
  4. Let the cauliflower cool, then using a towel (or paper towels), press out as much moisture from the cauliflower as possible.
  5. Add in remainder of the ingredients, and stir. If the cauliflower is too crumbly, add an egg white to bind the cauliflower together.
  6. Place parchment paper on pizza pan. Empty the crust mixture onto the pan, and spread evenly (I used an additional sheet of parchment paper on top to make the crust smooth and even). Remove top sheet of parchment paper (if used), and place in oven.
  7. Cook crust for about 10-12 minutes, or until it starts to lightly brown.
  8. Remove crust from oven, and top with tomato sauce, cheese, and toppings of choice (I used turkey pepperoni above).
  9. Place back in oven for about 5-7 minutes, until cheese on top is fully melted.
  10. Let cool before slicing.

French Toast is one of my favorite comfort food breakfasts! When I was a kid this was an easy staple to make (and the egg still provided some protein!). However, growing up in our household we added the margarine, Aunt Jemima (or whatever the generic version happened to be available), and served it on classic white bread. I’ve taken the classic recipe and cleaned it up a bit to make 21 Day Fix French Toast.

Tina’s Pro-Tip

There are two pantry ingredients that I keep in my arsenal to add a “sweetness” of flavor without packing the calories. They are my “salt and pepper” to many items that are sweet! Cinnamon and (pure) Vanilla Extract are two versatile flavors that work well together, and this recipe is certainly no exception!

21 Day Fix

If you’re on the fix, the counts are accurate for the recipe as written. If you decided to add coconut oil (or butter), you’ll have to factor in those teaspoons. Also, you are allowed one teaspoon of sweetener per day (it’s in the drink section of the 21 Day Fix book), so keep that in mind if you want to add a touch of maple syrup (get the REAL stuff!! It’s natural and fix approved!)

Ingredients

  • 1 Egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 slice whole grain bread
  • 1/2 banana

Instructions

  1. In a small bowl, beat the egg, vanilla, and cinnamon together. Dip the bread into the mixture until the bread is fully covered.
  2. Place bread in non-stick skillet on medium high heat, until first side is done. Repeat the other side.
  3. Remove and enjoy with sliced banana.
