Clean Crockpot Beef Stroganoff

When I first got married, my stepdaughter’s favorite meal was Beef Stroganoff – the Hamburger Helper edition! Packed with sodium and preservatives, the meal provided a creamy comfort dish! If you enjoy this meal, but would rather have a healthier, cleaner version, I’ve gone one step further and taken it to the crockpot! This Clean Crockpot Beef Stroganoff brings the ease of cooking and combines with a comforting meal that is 21 Day Fix approved! Yahoo! And the best part? My three year old daughter (who eats a diet of dairy, ketchup, and occasion chicken) LOVES this meal.

 Tina’s Pro-Tip

The mushrooms are pretty optional. I know it’s standard for this dish, but I’ve got a family of picky eaters! This meal will still taste AMAZING.

21 Day Fix Count

Measure out 1 red of the meat mixture and count as red. Measure and serve noodles as a yellow.

Clean Crock pot Beef Stroganoff

Ingredients

  • 1.5 lbs top round steak
  • 1 medium diced onion
  • 3 Tablespoons chopped parsley
  • 3/4 teaspoon dried dill
  • 3/4 teaspoon ground black pepper
  • 8 oz sliced mushrooms (optional - we skipped this due to picky eaters!)
  • 2 Tablespoons minced garlic
  • 1/3 cup whole wheat flour
  • 1 cup low sodium beef broth
  • 1 cup plain greek yogurt

Instructions

  1. In crock pot, place all the ingredients except for the flour, broth, and yogurt. Mix ingredients.
  2. In a separate bowl, combine flour and broth and whisk until flour is completely dissolved. Pour into crockpot and cook on low for 7-8 hours.
  3. Turn off crock pot and let cool for 10 minutes. Mix in greek yogurt (the steak should be tender and shred as you mix).
  4. Serve over whole wheat noodles.

Crockpot Buffalo Chicken

Buffalo wings – they taste amazing, don’t they? But the original fried version doesn’t mesh well with a healthy lifestyle. This recipe for Crockpot Buffalo Chicken has FOUR ingredients that is not only an easy fix in the kitchen, but is a LOT easier to fit into your healthy lifestyle. This is creamy and absolutely delicious. Want more kick? Just add some more sauce!!!

So here are the four ingredients:

Boneless chicken breasts, buffalo sauce, greek yogurt, and bleu cheese.

Tina’s Tip

My ONLY word of caution will be with the buffalo sauce, as the sodium content is a little high. Edit: I went shopping the next day to compare labels and look for alternatives. Please see THIS post to see what I found for an alternative.

21 Day Fix

To serve: Use 1 red container of chicken and count as 1 red. Measure blue cheese separately and count as a blue.

Ingredients

  • 4 lbs Boneless Chicken Breasts
  • 2 Cups RedHot sauce, divided
  • 10 oz Plain Greek Yogurt
  • Blue Cheese crumbles

Instructions

  1. Place chicken breasts into crockpot.
  2. Add 1 cup of RedHot sauce, pouring on top of the chicken.
  3. Cook on low for 6-8 hours.
  4. When the chicken is done, it should easily shred with a fork. Empty the liquid.
  5. Add remaining 1 cup RedHot sauce, greek yogurt, and stir. The chicken shred in the process.
  6. Top your portion with blue cheese crumbles. You can either use it in a wrap with veggies, on a bun as a sandwich, or eat plain!
